Course Overview
The aims of this course are to: Introduce learners to different types of plant-based diets Explore the potential health benefits of plant-based eating Assess potential nutrient imbalances associated with plant-based eating and explore strategies for avoiding these Identify plant-based foods with specific health promoting properties Aid learners in finding and utilising available resources to help them, or others, transition onto a nutrient dense, whole food plant-based diet
Course Learning Outcomes
On the successful completion of this course the student will be able to:
- Identify the classifications of different plant-based diets
- Discuss current trends in plant-based eating and key reasons for this
- Discuss how plant-based diets support key systems of the body (with a focus on the microbiome, cardiovascular system, blood sugar balancing mechanisms, overweight and obesity)
- Evaluate key sources and bioavailability of important macro- and micro-nutrients on a plant-based diet, including protein, omega 3 fatty acids, iron, calcium, iodine, vitamin B12 and vitamin D
- Compare different plant-based dietary recommendations, including food pyramids and food plates
- Outline the health promoting properties of specific plant foods, including nuts, seeds, pulses, fruits, vegetables and mushrooms
- Describe how food preparation techniques may enhance the nutrient value of plant-based foods, including sprouting and fermenting
- Identify key resources and techniques to help an individual transition onto a plant-based diet

Juanita started her plant-based journey whilst studying Nutrition and Lifestyle Coaching at IHS. She has since developed a successful plant-based business "Little Spoons of Happiness" where she inspires individuals wishing to adopt a more plant-based diet, by taking away the overwhelm and replacing it with mouth-watering, nutritionally balanced plant-based recipes for the whole family.
